Making batches of this simple granola will have you set for the rest of the week! The ginger is sure to give you a morning kick, and pairs great with yogurt, milk, or handfuls on its own.

  • 2 C. flaxseeds
  • 2 C. hulled sunflower seeds
  • 6 C. Steel Cut oats
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1/4 C. honey
  • 1/3 C. crystalized ginger, finely chopped
  • 2 C. dried apricots, finely chopped

Using your hands, mix together thoroughly in a large bowl. Spread this mixture out on a large cookie sheet and bake at 350 for about 30 minutes until it starts to brown, stirring every 5 minutes or so.
Let granola cool, then stir in apricots and ginger
Store granola in airtight container, and serve in the morning with vanilla yogurt [optional]
