Apricot Glazed Ham Recipe

- 1 cup dried apricots
- 1 cup chicken broth
- ½ cup brown sugar
- 3 lbs fully cooked boneless ham
- 2 tbsp butter
- ½ cup finely chopped onion
- 12 oz jar of apricot preserve
- ¼ cup dijon mustard
- 2 tsp grated orange zest
Preheat oven to 325 degrees. In a microwave-safe bowl, cover apricots with chicken broth and microwave on high for 2 minutes. Take heated apricots and slice into thin strips. In a separate bowl, mix apricots, sugar and ¼ cup of the heated stock.
Place ham in a roasting pan. Line with foil to avoid burning the bottom. Bake for 90 minutes. Cover with apricot mix and bake for another 30 minutes, or until internal temperature reaches 140 degrees. Occasionally baste with pan drippings.
While ham is cooking, heat butter over medium heat. Add onion and cook for 5 minutes or until tender. Add preserves, mustard, orange zest, and remaining reserved stock. Bring to boil and then cook over low heat for 10 minutes. Slice ham and serve with apricot sauce
