Apricot Squares

These cinnamon-sweet bars are the perfect treat anytime.

Ingredients

  • 1/2 C. shortening
  • 1/2 C. sugar
  • 1 ea Egg, well beaten
  • 1/2 tsp. lemon juice
  • 1 1/2 C. flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 pinch cloves
  • 2 Tbs. milk
  • 3/4 C. apricot preserves

Directions

Cream shortening. Add sugar, cream until fluffy. Add egg and lemon juice, blend well. Sift together dry ingredients, add, alternately, with milk. Spread half the batter into greased 9"x9" pan. Cover with apricot preserves. Top with remaining half of the batter. Bake at 400 degrees for 25 minutes or until golden, and batter tests done. Cool, and cut into squares.
