Arizona Pork Roast

I came up with this one of a kind recipe for pork roast while I lived in sunny Arizona. This is different from all other because I added raisins, chili pepper and much more.

  • 2 lb. pork loin roast
  • 1/2 C. raisins
  • 1/2 C. green pepper diced
  • 1 clove garlic minced
  • 1 tsp. bay leaf crumbled
  • 1 can tomato puree
  • 1 tsp. red chili pepper ground
  • 1 Tbs. onion chopped
  • 1 tsp. sage
  • 1/3 C. flour (all-purpose)
  • 1 Tbs. Worcestershire sauce

Combine the seasonings except chili powder and Worcestershire. Rub into roast. Place roast flat side up in a baking dish and roast at 350 for 3 hours. Reduce oven to 250 degrees. Pour off drippings into skillet and add onion, green pepper, sweet potato, Worcestershire and sauté until slightly done. Combine flour and ground chili. Add to skillet along with tomato puree and raisins and simmer for 10 minutes stirring constantly, until sauce thickens. If sauce is too thick add a little water, gradually until sauce reaches desired consistency. Return roast to pan, baste with sauce, and roast for 45 minutes more basting every 15 minutes. Serve with favorite vegetable.
