Artichoke Olive Chicken Bake

Ingredients
- 1 pkg. Eden Foods Kamut Spirals
- 1 Tbs. olive oil
- 1 med. onion, chopped
- 1/2 green bell pepper, chopped
- 2 C. shredded cooked chicken
- 1 14-oz. can Italian style diced tomatoes
- 1 14 oz. can artichoke hearts, drained
- 1 6-oz. can sliced black olives, drained
- 1 tsp. dried Italian seasoning
- 2 C. shredded mozzarella cheese
Directions
Preheat oven to 350 degrees. Prepare pasta according to package. Drain. Heat oil in large skillet over medium heat, until hot. Add onions and bell pepper, cook and stir 1 minute. Add pasta, chicken, tomatoes, artichoke, olives and Italian seasoning. Mix until blended. Place half of chicken mixture in prepared dish, sprinkle with half of cheese. Top with remaining chicken mixture and cheese. Bake covered in a 2-qt. casserole dish (sprayed with with non stick cooking spray) in the oven for 35 minutes.
