Artichoke Pasta Salad

This creamy salad is a great side dish no matter what time of year.

  • 1 6 oz. jar marinated artichoke hearts
  • 1 C. macaroni
  • 4 oz. cheddar cheese, cut into 1/2-inch cubes
  • 1/4 C. chopped cucumber
  • 1 green onion, sliced
  • 1/2 C. salad dressing or mayonnaise

Drain artichoke hearts, reserving the marinade. In a medium bowl combine the drained artichoke hearts, cooked pasta, cheese cubes, cucumber and onion. Toss to mix well. For the dressing, combine in a bowl the reserved artichoke marinade and the salad dressing or mayonnaise. Stir to mix well. Pour over cheese and pasta mixture, toss gently to coat. Chill until ready to serve.
