Here's a new type of appetizer that puts a spin on your traditional bruschetta. Top your toast with roasted artichokes and peppers.

  • 1 (6.5 oz.) jar marinated artichoke hearts, drained and chopped
  • 2 red pepper, chopped
  • 1/2 C. grated Romano cheese
  • 1/3 C. finely chopped red onion
  • 5 Tbs. mayonnaise
  • 1 French baguette, cut into 1/3 inch thick slices

Preheat the broiler. In a large skillet with olive oil, cook artichoke and peppers for about 5 to 6 minutes or until they are roasted. Mix cheese, onion and mayonnaise in a small bowl. Add spread on toasts. Top with arthichoke and peppers. Place breads in preheated oven and toast for 2 to 3 minutes or until bread is golden brown.
