Artichokes with Green Fava Beans

Ingredients

  • 5 artichokes
  • 3/4 C. olive oil
  • 1/2 C. canned tomatoes
  • 1/4 C. chopped onion
  • 1/2 bunch scallions, chopped
  • juice of 1 lemon
  • 1 lb. green fava beans
  • 1/4 C. chopped parsley
  • sprig dill, minced
  • salt

Directions

Remove outside tough leaves of artichokes. Cut tips and split lengthwise, removing fuzz. Place in cold water to which lemon juice and salt have been added. String fava beans. Brown chopped onion in olive oil and when of light brown color, add a little water. Then add artichokes, fava beans and other ingredients. Season with salt, pepper and a little lemon juice and cook on low flame until artichokes are tender.
