Arugula and Pear Salad

I love adding fruits to my salads, especially pear!

Ingredients

  • 6 C. arugula, tough stems removed
  • 2 Tbs. lemon juice
  • 3 Tbs. olive oil
  • salt
  • pepper
  • 2 ripe pears, thinly sliced
  • 1 small wedge parmesan cheese

Directions

Trim tough stems from arugula and discard any bruises leaves. Wash it in cool water. Dry and tea them into bite-size pieces and add to a large bowl. In a medium bowl, whisk the lemon juice, oil and salt and pepper to taste. Add pears, and toss gently with the dressing. Place the pears on top of the greens. With a small knife, shave thin flakes of the cheese over the salad. Serve.
