Arugula Salad

Ingredients
- 1/3 C. olive oil
- 3 Tbs. red wine vinegar
- 1 tsp. salt
- 1/2 tsp. pepper
- 4 C. arugula
- 4 oz. parmesan cheese, in one piece
Directions
In a serving bowl, combine olive oil, vinegar, salt and pepper. Beat with a fork to blend. Add arugula to bowl with dressing and toss to coat. With a vegetable peeler shave off thin slices of cheese and scatter over the top of the salad.
