  • 1 C. ricotta cheese
  • 1 C. mozzarella cheese, shredded
  • 1 C. Asiago cheese, shredded
  • 1 egg
  • 1 C. penne pasta, cooked and drained
  • ½ stick butter, unsalted
  • 1 C. heavy whipping cream
  • 2 cloves garlic, minced
  • ¼ C. Parmesan cheese
  • Salt and pepper to taste
  • 1 C. asparagus, steamed and chopped

In a large bowl, combine ricotta, mozzarella, Asiago, and egg until creamy. In a medium saucepan, melt butter and add in cream, garlic, salt, and pepper. Stir in Parmesan to melt and simmer for 8 minutes to thicken. Pour into ricotta blend and mix well. In a greased baking dish, toss penne with Alfredo and asparagus. Bake covered for 25 minutes and uncovered for an additional 5 to 10 at 350 degrees.
