Asian Beef with Scallions and Snow Peas

  • 1/2 cup soy sauce
  • 3 tbs sherry
  • 2 tbs brown sugar
  • 2 tbs Cornstarch
  • 1 tbs minced ginger
  • 8 oz fresh snow pea
  • 5 Scallions
  • Pinch of Salt
  • 3 tbs olive oil
  • Crushed red pepper
  • 1-1/2 pounds flank steak

Trim the fat off of the flank steak and slice the steak thinly against the grain. Trim the ends off of the snow peas. Slice the scallions diagonally into half inch pieces. Mix the first five ingredients in a bowl. Pour half of the sauce over the flank steak and toss. Reserve the over half of the sauce and set aside.

Heat the oil in an iron skillet or until hot. Add the snow peas and stir for forty five seconds. Remove from heat and set aside.

Let the pan get hot again and add half the meat leaving most of the sauce in the bowl. Add half the scallions. Spread the meat out as you place it in the skillet but do not stir. Brown on one side turn and brown on the other. Remove from heat. Do this again with the other half of the meat and add the reserved sauce. After you turn it add the already cooked meat and the snow peas. Stir for about half a minute and turn off the heat. It will thicken as it cools. Add salt to taste. Serve over rice adding crushed red pepper over the top.
