Asian Chicken Appetizer

Ingredients
- 3/4 C. chicken, cooked and chopped
- 1/2 C. carrots, shredded
- 1/4 C. water chestnuts, chopped
- 3 Tbs. green onions, sliced
- 1 Tbs. fresh parsley, minced
- 2 tsp. soy sauce
- 1/4 tsp. ground ginger
- 1 garlic clove, minced
- 2 Tbs. red pepper, chopped
- sweet and sour sauce
- assorted crackers
- one 8-oz. package cream cheese, softened
Directions
In a medium bowl, combine chicken, carrots, water chestnuts, green onions, parsley, soy sauce, ginger, garlic, and red pepper. Mix well. Cover and refrigerate for 1 hour. In a small bowl, combine cream cheese and 2-3 tablespoons of sweet and sour sauce. Beat until smooth and fluffy. Spread cream cheese mixture over bottom of 10-inch round serving plate. Spoon topping mixture evenly over cream cheese. Drizzle with 1/2 cup sweet and sour sauce.
