  • 1 T. olive oil
  • 1 lb. cooked chicken, diced
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1/4 C. hoisin sauce
  • 2 T. soy sauce
  • 1 T. rice wine vinegar
  • 1 T. ginger
  • 1 tsp. Sriracha
  • 1 8-oz. can whole water chestnuts, drained and diced
  • 2 green onions, thinly sliced
  • 1 red pepper, sliced
  • 1 head butter lettuce

In a large saucepan, add olive oil, chicken, onion and garlic. Pour in hoisin sauce, soy sauce, rice wine vinegar, ginger, and Sriracha. Cook until onions are translucent. Toss in water chestnuts, green onion, and red pepper. Stir frequently until tender. Pull apart head of lettuce and spoon chicken mixture into the center of four leaves.
