  • 1 Tbs. Ground Chili Paste
  • 3 Garlic Cloves, minced
  • 3 Tbs. Soy Sauce
  • 3 C. Vegetable Stock
  • 1/4 C. Lime Juice
  • 2 Tbs. Granulated Sugar
  • 1/2 tsp. Sea Salt
  • 1 Celery Stalk, chopped
  • 1 C. Tomatoes, wedged
  • 1 15 oz. can Cut Baby Corn
  • 1 10.5 oz. package Lite Firm Silken Tofu, cubed
  • 2 C. Bok Choy Leaves, shredded
  • 1/2 Red Cabbage, wedged

Pour 2 Tbs. of water into a large stock pot over medium-high heat. Add the chili paste and garlic, and sauté for 30 seconds until fragrant. Pour in the soy sauce and stir for 10 seconds. Stir in the vegetable stock, lime juice, sugar, and salt. Bring chili paste mixture to a boil and reduce heat to low. Add celery, tomatoes, baby corn, tofu, bok choy, and red cabbage. Let soup simmer for 3 minutes before serving.
