  • 1 32 oz. carton Vegetable Broth
  • 1 tsp. Ground Ginger
  • 4 oz. Shiitake Mushrooms, stemmed, cleaned, and sliced
  • 2 Tbs. Sake
  • 2 Tbs. Soy Sauce
  • 1 Tbs. Chinese Red Rice Vinegar
  • 2 Tbs. Miso
  • 1 C. Broccoli Florets
  • 4 Scallions, white and green parts only, chopped
  • 8 oz. Dried Soba Noodles, uncooked

In a large crockpot, combine all of the ingredients except the soba noodles and mix well. Cook on low for 4-6 hours. Stir in the soba noodles. Increase heat to high and cook for 10 minutes, or until noodles are tender.
