  • 3 lb. beef short ribs
  • 2 Tbs. dark soy sauce
  • 3 Tbs. peanut oil
  • 1 large head of garlic, cloves separated
  • 1 stick cinnamon
  • 3 star anise, or 1 1/2 tsp. anise seed + 3 pinches of allspice
  • 3 oz. light soy sauce
  • 3 Tbs. light brown sugar
  • 3 C (25 oz.) dark wheat beer

Combine the beef and the dark soy in a bowl and marinate in the fridge for at least 30 minutes. In a deep saucepan, heat the oil and fry the garlic for 1 minute. Add the cinnamon and star anise. Fry for another minute. Remove the garlic and spices from the pan and set aside before browning the meat in batches until they are caramelized. When the ribs are browned, put the garlic and spices back in the pan and add the light soy, sugar, and beer. Stir until the sugar is dissolved completely. Reduce heat to low and simmer for 30 minutes uncovered, stirring occasionally. Cover and simmer for 3 more hours, or until the meat is falling off the bone. Carefully remove the beef with a slotted spoon and heat the liquid still in the pan on high heat until it is reduced and thickened. Return the beef to the pan and heat through.
