Asian Noodles with Cabbage and Corn
Ingredients
- one 8-oz. package udon or soba noodles
- 2 Tbs. olive oil
- 4 C. thinly sliced green cabbage
- 1 C. frozen corn kernels, thawed
- 3 scallions, cut into 1-inch pieces
- 1 to 2 Tbs. soy sauce
- 1 to 2 tsp. dark sesame oil
- pepper to taste
Directions
Cook noodles until al dente, then drain. Heat olive oil in a wide skillet or wok. Add the cabbage, corn, and scallions and stir-fry over medium-high heat until the cabbage is slightly wilted but still crisp. This should take about 3 to 5 minutes. Stir in noodles, then season with soy sauce, sesame oil, and pepper. Serve immediately.
