Ingredients
- 2 whole chicken breasts, skinned, boned, halved, and flattened
- 2 oranges, peeled and sliced, with seeds removed
- 1/2 C. flavored bread crumbs
- 1/2 tsp. grated orange rind
- 1 C. orange juice
- 1 tsp. soy sauce
- 1 tsp. brown sugar
- 1/4 tsp. ginger
- 1/2 C. water
- 1/2 C. slivered almonds
- 1 sm. onion, chopped
- 2 tsp. butter
Directions
On a flat plate, press chicken into bread crumbs on all sides. In a bowl, add orange juice, orange rind, soy sauce, brown sugar, water, and chopped onion. Lay out chicken in a casserole dish. Put orange slices on chicken. Top with almonds. Add orange juice mixture and dot with butter. Bake in a preheated 400-degree oven for 20 minutes. Remove chicken from casserole to heated plates and spoon remaining sauce on and around chicken.
