Ingredients

  • 5 lb. ribs
  • 3 Tbs. kosher salt
  • 1 Tbs. granulated garlic
  • 1 Tbs. Chinese five spice
  • 1 Tbs. powdered garlic
  • 1 Tbs. cayenne pepper
  • 1 tsp. coriander
  • Baste:
  • 1/4 C. oyster sauce
  • 4 Tbs. soy sauce
  • 4 Tbs. sesame oil
  • 2 Tbs. vinegar
  • 4 Tbs. dry sherry

Directions

Mix everything except for baste ingredients on ribs. Marinate overnight in a tight container. Preheat smoker to 250 degrees. Place ribs on rack. Smoke for 3 to 5 hours, basting with mop every 45 minutes. When done, remove from smoker and cover with foil.
