Asparagus and vinaigrette is a great replacement for a starter salad served before any fish entree or light meat meal. You can also serve it as a side instead.

3-4 servings

Ingredients

  • 1 can whole asparagus spears
  • 2 Tbs. vinegar or lemon juice
  • 1/4 C. vegetable oil
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. minced onion
  • 2 Tbs. chopped pimento
  • 1 tsp, dried parsley flakes

Directions

Drain asparagus and heat. Combine remaining ingredients and pour over hot, drained asparagus. Chill. Serve on salad plate with lettuce.
