Asparagus Casserole

Asparagus Casserole

Excellent for those special occasions and carry in dinners.

Ingredients

  • 2 16 oz. cans or 2 10 oz. pkg. frozen asparagus
  • 1 10 3/4 oz. can cream of mushroom soup
  • 4 hard cooked eggs, sliced
  • 1 C. shredded Cheddar cheese
  • 16 crushed crackers
  • 1 2 oz. can mushroom stems and pieces

Directions

Grease a 1 quart casserole dish generously with butter. Arrange layers of all ingredients, beginning and ending with cracker crumbs. Reserve 1 egg for garnish, if desired. Bake at 350 degrees for about 20 minutes, or until casserole bubbles.

Yield: 8-10 servings

Note: Casserole is better if left to sit awhile before serving as it thickens more.
