Ingredients

  • 1/2 C. olive oil
  • 2 lb. asparagus, chopped
  • 2 Tbs. garlic powder
  • 2 Tbs. onion powder
  • 1 lb. pasta, cooked
  • 2 Tbs. dried rosemary
  • 2 tsp. salt
  • 1 C. mayonnaise

Directions

In a skillet, sauté asparagus in olive oil until tender crisp, about 4-6 minutes. Sprinkle garlic powder and onion powder on top of asparagus and cook for 1-2 more minutes. Pour over hot pasta and toss to coat. In a bowl, mix rosemary, seasoned salt, and mayonnaise. Add mayonnaise mixture to pasta mixture and stir until ingredients are mixed through. Refrigerate 2 hours or until chilled. Serve.

  • I cut the mayo to 3/4 cup. Also added 1/4 cup crumbled feta cheese and halved cherry tomatoes.....very good!!!!

  • Good recipe, but needed a little something to bring out the flavors. Splash of lemon juice or rice vinegar maybe?

  • This was a lovely salad. My kids thought it was great. I cut back on both the mayo and the olive oil by half and still found it delightful. Thanks for your excellent post just in time for the holiday. This recipe is a keeper; soon to be a family favorite.

  • Marevella, I don't know where you seem to see this recipe listed as healthy but you would do well to let your mean comments go without being posted. Not every dish we eat has to be healthy, once in a while it is nice to splurge.

  • THIS IS A WONDERFUL RECIPE BUT I WILL ADD A LITTLE EXTRA OLIVE OIL SO I CAN CUT THE AMOUNT OF MAYONAISE DOWN TO MAKE IT A LITTLE MORE CHOLESTEROL FRIENDLY, I FOUND THIS WORKS GREAT BUT DOESN'T AFFECT THE FLAVOR MUCH

  • lets see a cup of mayo is 1600 calories, a pound of pasta is 1674, a half cup of oil is around 100--2 pounds of asparagus is ? ------and you list this as healthy???? Thats at least 4-500 cals per person if it serves 8 and theres probably other things served with it adding more cals. I dont understand your system but this is NOT a 'healthy' salad
