Asparagus Rolls

These asparagus rolls are a HUGE hit at every party. You can experiment a little with the ingredients. Be creative!

  • 8 oz. cream cheese, at room temperature
  • 3-4 pieces bacon, cooked, drained and crumbled
  • 2 Tbs. minced sun-dried tomatoes, pimiento or red bell pepper (choose one)
  • 2 green onions (white and green parts minced)
  • 15 thin fresh asparagus spears
  • 15 pieces white sandwich bread
  • 4 Tbs. melted butter
  • 2/3 C. grated Parmesan cheese

Mix cream cheese, bacon, red veggie of choice and green onion in a bowl and set aside. Snap asparagus spears at their 'breaking point then saute or steam until crisp-tender (about 3 minutes) and set aside. Cut crusts off of bread and roll each piece flat with a rolling pin and set aside. Preheat oven to 400 degrees. Spread roughly 1 1/2 Tbs. cheese mixture on a piece of bread, place a spear onto the bread and roll. Repeat with the rest of your ingredients. Place rolls onto a greased cookie sheet. Brush all rolls with melted butter and sprinkle each one generously with Parmesan cheese (or roll in Parmesan and place in pan). Bake at 400 degrees for 15-20 minutes or until slightly browned. Let cool and cut each roll into halves or thirds. Serve.
