Atlanta Pork Chops and Rice

A tomato and onion sauce blends all the ingredients together well and a bit of brown sugar brings the right touch of sweetness.

Ingredients

  • 4 pork chops
  • 2 Tbs. oil
  • 1/4 C. sliced celery
  • 2 (8 oz.) cans tomato sauce with onions
  • 1 1/2 C. water
  • 2 Tbs. brown sugar
  • 1 tsp salt
  • 1/2 tsp basil
  • 1 C. uncooked rice

Directions

Brown pork chops in skillet in hot oil. Remove to warm platter. Add celery to skillet. Sauté until tender; drain. Add tomato sauce, water, brown sugar, salt, basil and rice; mix well. Arrange pork chops over top. Bring to a boil; reduce heat. Simmer, covered, for 30 minutes or until pork chops are tender.
