Ingredients

  • 2 lbs. lamb neck, chopped
  • 1 T. fresh thyme
  • 1 tsp. fresh rosemary, chopped
  • 1 bay leaf
  • ¼ C. fresh chives, chopped
  • ½ C. frozen peas
  • 1 C. barley
  • 1 yellow onion, chopped
  • 2 carrots, chopped
  • 2 red potatoes, chopped
  • 8 C. water

Place a large pot over the stovetop. Set the heat to high. Add in the chopped ingredients. Let the ingredients cook for 5-10 minutes. Pour in the water. Add in the remaining ingredients, except for the frozen peas. Cook mixture for 1 hour or until the barley has cooked. Add peas in after 30 minutes have passed. Serve and enjoy.
