Unless you live near a big city or somewhere that is known for having an excellent Mexican cuisine, it is hard to find authentic salsa verde. This green salsa has a unique taste from the tomatillos that is different from the usually red tomato salsas. Tacos, casseroles, even eggs will do well with the taste that the salsa verde will bring to it.

  • 5 tomatillos
  • 3 serrano chilies
  • 1 Tbs. lime juice
  • salt
  • cilantro

Remove husk and stem from the tomatillos. Seeds can be removed to make a milder flavor, rinse. Place all of the ingredients into a pot and cover with water. Boil for a few minutes. Remove from heat and add the vegetables to a blender, do not add extra water. Blend until the mixture is the desired consistency. Pour into a container and add salt and cilantro if desired.
