Autumn Soup

This is a soup that I make when the fall weather sets in. It is a healthy, hearty and very tasty soup. It won first place in a local newspaper contest. You'll enjoy it.

  • 1 lb. ground beef
  • 1 C. chopped onions
  • 4 C. hot water
  • 1 C. cut up carrots
  • 1 C. cut up celery
  • 1 C. cut up potato
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. meat extract
  • 1 bay leaf
  • Pinch dried basil
  • 6 whole fresh tomatoes, stems removed

Brown beef slowly in hot oil in heavy kettle. Add onions and cook 5 minutes. Loosen meat from bottom of kettle. Add remaining ingredients, except tomatoes. Bring to a boil, cover and simmer 20 minutes. Add the tomatoes, simmer 10 more minutes. Serve a whole tomato in each bowl.
