Autumn Soup
Ingredients
- 1 lb. ground beef
- 1 C. chopped onions
- 4 C. hot water
- 1 C. cut up carrots
- 1 C. cut up celery
- 1 C. cut up potato
- 2 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. meat extract
- 1 bay leaf
- Pinch dried basil
- 6 whole fresh tomatoes, stems removed
Directions
Brown beef slowly in hot oil in heavy kettle. Add onions and cook 5 minutes. Loosen meat from bottom of kettle. Add remaining ingredients, except tomatoes. Bring to a boil, cover and simmer 20 minutes. Add the tomatoes, simmer 10 more minutes. Serve a whole tomato in each bowl.
