  • 3 cups oats
  • 1 packet pudding mix (preferably pumpkin spice, but if it's not available stick with vanilla)
  • 2 cups brown sugar
  • 1 teaspoon vanilla extract
  • 2/3 cup almond milk
  • 1 and 1/2 sticks of butter
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice

First, boil the milk, sugar, and butter for 2 minutes. Once it is done boiling, pour in the pudding packet and prepare according to instructions. Whisk in all the spices and vanilla, and finally the oats.

Let it sit for 5-10 minutes and then use an ice cream scoop to scoop the dough onto a wax paper covered cookie sheet. Refrigerate for 2 hours.
