Hot and crispy, paninis are quick and good in any way you make it. This roasted red pepper panini is a simpler sandwich, but it’s extremely tasty with the cheddar cheese and avocado.

Ingredients

  • 2 ripe avocados, peeled and sliced
  • 4 slices of ciabatta bread
  • 4 slices of cheddar cheese
  • ½ cup of chopped red bell peppers, roasted
  • salt and pepper, to taste

Directions

Heat panini press to 375 degrees Fahrenheit (or medium-high heat).
On a slice of bread, stack a slice of cheese, half the avocado slices, half of the roasted bell peppers, and another slice of cheese and close with another piece of bread; repeat for second sandwich.
Grill both sandwiches on the panini press for 5 minutes.
Slice and serve while still warm and toasty!
