  • two 15-oz. cans pinto beans with Mexican spices, drained
  • one 15-oz. can garbanzos
  • 1/4 C. green onion, sliced
  • oil and vinegar dressing
  • lettuce
  • 4 avocados, halved and spitted

Combine all beans and green onion.  Toss with enough oil and vinegar dressing to coat, about 1/4 cup.  Arrange lettuce on a platter.  Place 8 avocado halves on lettuce.  Spoon bean salad into avocado shells.

  • I would half to add onion and chop the avocado up small and and blend the beans in the food blender and then put in avocado shells or bowl
