Avocado Burritos

This great quick no cook summer dinner is so yummy. My husband and 2 teen aged boys love it. Great to make for lunches too!

  • 8 tortillas
  • 4 avocados
  • 1 small tub sour cream
  • 1 bunch alfalfa
  • 1 bunch green onions
  • Salt and pepper

Lay tortilla out flat, spread about 1 tsp. of sour cream in the middle of the tortilla long ways. Cut up 1/2 of the avocado and layer on sour cream. Add some alfalfa, green onions, salt and pepper to tast. Roll it up and eat. Serve with salsa and chips.

  • Oh my gosh this is just heaven..... and now I have to try the bacon and diced tomatoes as well.... next time for that one.

  • This is really good. I have a variation to this recipe also that I have used for years. Use Pita Bread sliced in half, a couple of slices of bacon and diced tomatoes.
