  • ½ cup chocolate chips
  • 3 tablespoons melted coconut oil
  • 1 pitted avocado
  • 1 egg
  • 2 teaspoons vanilla
  • ½ cup granulated sugar
  • ¼ cup cocoa powder
  • ½ teaspoon baking powder
  • 2 teaspoons ground espresso
  • 4 tablespoons chocolate chips

Preheat the oven to 350 degrees F. Melt the ½ cup chocolate chips for 45 seconds in a microwavable bowl. Use an electric mixer to blend the avocado. When the avocado is smooth, add the melted chocolate chips and coconut oil in a bowl. Add the egg, espresso, sugar, vanilla, cocoa powder, salt, and baking powder. Mix everything until the batter is smooth. Brush a brownie pan with coconut oil and add the batter. Sprinkle the tablespoons of chocolate chips over the top and bake for 25 minutes.
