Avocado & Mango Salsa

Don't wait too long to eat because the fruit will begin to "cook" in the lime juice and become soggy.

  • 2 Avocados, cut in 1/4-inch dice
  • 2 Mangoes, cut in 1/4-inch dice
  • Juice of 2 Limes
  • 2 Jalapeño peppers, seeded and minced (optional)
  • 1/4 C. minced Red Onion
  • 1 Garlic clove, minced fine
  • 1/4 C. minced Cilantro
  • Sea Salt to taste
  • freshly ground Black Pepper to taste

In a medium glass bowl (not metal), mix the diced avocado, diced mango, lime juice, jalapenos, onion, garlic, cilantro, salt, and pepper. Store in a covered container in the refrigerator for at least 30 minutes, but no more than 1 hour before serving.
