Avocado Pita Pockets
Time needed
Serving Size / Yield
Ingredients
- 1 med. avocado (ripe but firm)
- 6-8 slices bacon
- pita bread
- dash of salt and pepper (optional)
- alfalfa sprouts or shredded lettuce
- tomatoes
- mayonnaise, sour cream or plain yogurt
Directions
Cut avocado into 1/4-inch slices Slice tomato thinly. Cook 6-8 slices bacon and cut in half or bite-size pieces Cut pita bread in half to make pockets and warm slightly for easier opening. Apply condiment of choice (mayonnaise, sour cream, or plain yogurt) to the inside of a pita pocket. Place avocado, tomato, and 2-3 half slices of bacon in pita pocket (more bacon if in bite size pieces). Put alfalfa sprouts or shredded lettuce in pita pocket on top of other ingredients. Add salt and pepper to taste.
You may also use tortilla shells instead to make a wrap. To warm pita bread, wrap in a damp paper towel and microwave for 10-15 seconds. This works for tortillas also if you do not have a tortilla warmer.
