Ingredients

  • 1 lb. shrimp, chopped
  • 3 avocados
  • 1 onion, chopped
  • 1 carrot, chopped
  • 2 tbsp. extra virgin olive oil
  • ¼ cup Greek yogurt
  • 1 tsp. rosemary, minced

Combine all ingredients (except avocado) in a food processor
Process until to preferred texture
Slice avocados in half and remove the seeds
Place some of the shrimp mixture inside each half
Serve
