  • 1/2 lb. Velveeta cheese
  • 2 - 3 avocados soft
  • 2 long stem green chilies
  • 1/4 tsp. cilantro
  • 1/4 minced onion bits
  • Pinch of garlic
  • 2 minced sun dried tomatoes (or you can use tiny diced fresh)
  • 1 Tbs. of mayonnaise

On top of stove on grill toast chili, wrap in wet towel, peel off skin. Shred or cut into small pieces. Puree avocado; to moisten add mayonnaise gradually In bowl mix avocado with diced fresh cilantro, onion, garlic, and sun dried tomatoes in salted olive oil. You can add more spices to develop a smoother seasoned taste. Mayonnaise is added according to the taste of the avocado. Some avocados have a strong taste that can be toned down by using mayonnaise. In double boiler, melt Velveeta cheese. Add avocado mixture.

Optional; To add diversified colorization choose long chili that is red. 1 red and 1 green
