Awesome Carrot Cake Recipe

This is easy and simple to make. A family and company favorite.

Ingredients

  • 1 box moist spice cake
  • 1 C. water
  • 1/3 C. applesauce
  • 3 eggs
  • 2 C. grated carrots
  • 1/2 C. raisins
  • 2 tsp. grated orange peel

Directions

Heat oven to 350 degrees. Coat two 8 or 9-inch round cake pans with non-stick cooking spray. Combine cake mix, applesauce, water, and eggs in large mixing bowl. Beat on low speed for 1 minute, continue beating on medium speed for  2 minutes. Stir in carrots. Pour into prepared pans. Bake 30-35 minutes or until toothpick comes out clean. Cool 10 minutes, turn out onto rack and cool completely. Spread with frosting of choice - orange or cream cheese frosting is really good.
