Baby Broccoli with Garlic

Kids might like these gently flavored veggies, also called broccolini. If you can’t find it at the market, use regular broccoli.

  • 1 Tbs. olive oil
  • 32 ounces broccoli
  • 1/2 tsp. salt
  • 1 tsp. olive oil
  • 2 garlic cloves, crushed

Peel and slice 2 medium heads of broccoli. Separate the flowerets into 1 1/2 inch pieces. Crush the garlic with a garlic press.

In deep 12 inch skillet, heat 1 Tbs. oil over medium high heat. Add broccoli and salt; cook 4 minutes, tossing vegetables to coat well. Add garlic and remaining 1 tsp. oil, and cook 1 minute longer, stirring. Add 3 Tbs. water; cook broccoli 2 minutes longer or until tender crisp
