Baby Stir Fry
Ingredients
- 1 Tbs. light olive oil
- 1/2 tsp. dark sesame oil
- one 15-oz. can baby corn, drained, liquid reserved
- one 16-oz. package baby carrots
- 2 thin slices fresh ginger
- 1/2 C. frozen green peas, thawed
- pinch of salt
Directions
Heat oils and 1/2 cup liquid from corn together in a stir-fry pan. Add carrots and ginger and stir-fry until carrots are tender-crisp. Add baby corn, peas, and salt. Stir-fry until heated through, then remove ginger and serve.
