This simple stir-fry uses baby carrots, baby corn, and peas to make a yummy side dish.

Ingredients

  • 1 Tbs. light olive oil
  • 1/2 tsp. dark sesame oil
  • one 15-oz. can baby corn, drained, liquid reserved
  • one 16-oz. package baby carrots
  • 2 thin slices fresh ginger
  • 1/2 C. frozen green peas, thawed
  • pinch of salt

Directions

Heat oils and 1/2 cup liquid from corn together in a stir-fry pan.  Add carrots and ginger and stir-fry until carrots are tender-crisp.  Add baby corn, peas, and salt.  Stir-fry until heated through, then remove ginger and serve.
