  • 3 eggs
  • 1/3 cup vegetable oil
  • 1 1/4 cup fat-free cottage cheese
  • 4 oz shredded Cheddar cheese
  • 1 lb. shredded zucchini
  • 1/2 cup uncooked instant brown rice
  • 5 slices cooked bacon, roughly chopped
  • sea salt
  • freshly ground black pepper

Preheat your oven to 350 degrees F. Use cooking spray to grease a 2 1/2-quart casserole dish. Set the dish aside. Take out a large bowl and gently beat the eggs with the oil. Stir in the cottage cheese and Cheddar cheese and then season with salt and pepper to your liking. Add the zucchini, rice and bacon and stir to mix together. Transfer this mixture into the prepared casserole dish. Bake the casserole uncovered in your preheated oven for about 1 hour, which is around how long it should take for the top to turn golden brown. Remove from oven let the casserole rest for 5 minutes before serving. Serve when ready.
