Bacon and Cheddar Mashed Potatoes

This is a great change from plain old mashed potatoes. Sometimes if I am in a hurry I use instant mashed potatoes instead of fresh and I mix all the ingredients together in a pie plate and bake in the oven on low until the top begins to brown a bit.

  • 1-1/2 lb. potatoes (about 4 medium potatoes), unpeeled and quartered
  • 1/2 C. Miracle Whip dressing
  • 4 slices bacon, crisply cooked and crumbled
  • 1/4 tsp. garlic powder
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 C. shredded mild cheddar cheese

Cover potatoes with water in large saucepan. Bring to boil; reduce heat to medium. Cook 20 minutes or until tender. Drain. Mash potatoes. Add dressing, bacon, garlic powder, salt and pepper; beat until fluffy. Stir in cheese.
