Cheese and potatoes, what a great pair! This recipe uses up any leftover bacon and potatoes you may have had from the holidays. Top off the potatoes with melted cheese and crispy bacon bits.

  • 4 medium baking potatoes
  • 1/4 C. butter, cubed
  • 1 C. sour cream
  • 1 C. cheddar cheese, shredded
  • 4 bacon strips, cooked and crumbled

Bake potatoes at 400 degrees Fahrenheit for one hour or until tender. Cool slightly. Reduce heat to 350 degrees.
Cut each potato in half lengthwise. Scoop out pulp, leaving a thin shell. In a bowl, mash the pulp with butter. Stir in the sour cream, cheese, and bacon. Spoon or pipe into potato shells.
Place on a baking sheet. Bake for about 30 minutes or until heated through.
