Bacon and Dumplings

This quick and easy recipe comes from my Prussian side of the family.

Ingredients

  • 1 lb. bacon
  • 1-2 diced onions (or a bag of frozen diced onions)
  • 6 grated potatoes
  • 3 eggs
  • Salt
  • Flour

Directions

Use a large-sized skillet. Begin by dicing a pound of bacon. Add a lot of diced onions and let this cook while the dumplings are boiling. For the dumplings, grate six potatoes. These may be done by hand or in a food processor. Drain through cheesecloth. Add about 3 eggs, salt, and enough flour to make the mixture the consistency of mashed potatoes. Drop by teaspoonfuls in a large pot of boiling water. When they rise to the top, the dumplings are probably done, but I continue cooking them until I am sure. Drain the dumplings in a colander, and when dry put them in the skillet with the onions and bacon. Mix to coat them and continue to cook the rest of the dumplings in batches. Repeat. You will need a fairly large skillet for this final stage. Enjoy.
