Bacon and Egg Omelet

Ingredients
- 2 slices bacon, chopped
- 1/2 sm. onion
- 1/4 garlic clove
- 2 Tbs. olive oil
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 med. can tomatoes
- 1 bay leaf
- 1/2 tsp. basil leaves
- 4 eggs
- 3 Tbs. grated romano cheese
Directions
Place bacon in a saucepan with onion, garlic, oil 1/8 tsp. salt and 1/8 tsp. pepper. Saute for 5 minutes. Add tomatoes, cover and cook for 45 minutes. Add bay leaf and basil and cook for 5 more minutes. Beat eggs lightly, and add rest of salt and pepper. Portion eggs in 4 equal amounts to make 4 sm. omelets. Brown them gently on both sides in a buttered skillet. Cut omelets into 1-inch strips. Place in sauce, sprinkle with cheese and cook for 5 minutes.
