Bacon and Hash Brown Casserole

This makes a really good side dish for breakfast, brunch or any potluck.

Ingredients

  • 2 lb. frozen hash browns
  • 4 C. grated cheddar cheese
  • 1 10 3/4 oz. can cream of chicken soup
  • 2 C. sour cream
  • 1/2 C. melted butter
  • 1 C. chopped onion
  • 3 C. crushed cornflakes
  • 1 lb. bacon cooked, drained, and crumbled

Directions

Preheat oven to 350 degrees. In a bowl combine all ingredients, except for 1/2 of the cheese. Place in a buttered casserole dish and bake for 40 minutes. Remove from oven and top with the rest of the cheese and return to the oven for another 10 minutes.

  • There is an ingredient missing, it says "3 C chopped" listed after the onions and before the bacon, but it doesn't say what it is. 3 cups of what? 3 cups is a lot of any ingredient to just say, ah, heck, I'll leave it out this time- like it was a teaspoon of dry mustard. The rest of is sounds rich and gooey and wonderful.. Can't wait to find out the secret ingredient and give this one a try!
