Bacon and Sweet Potatoes

  • 1 lb. cooked sweet potatoes
  • 1/4 tsp. salt
  • 1/2 lb. Canadian style bacon
  • 1 C. juice from pineapple
  • 2/3 C. brown sugar
  • 1/8 tsp. cinnamon
  • 18 half-slices pineapple
  • 2 Tbs. butter

Preheat oven to 325 degrees. Slice potatoes lengthwise and arrange in greased pyrex utility dish. Sprinkle with brown sugar, salt, and cinnamon. Alternate thinly sliced bacon and pineapple on top of potatoes. Pour on pineapple juice. Dot with butter. Bake for 45 minutes in oven.
