  • Cupcakes:
  • 1 C All-Purpose Flour
  • 1 C Cake Flour
  • 1 3.9-oz box Instant Vanilla Pudding
  • 1 tsp Baking Powder
  • 1 tbs Potato Starch
  • 1 tsp Cinnamon
  • 1 tsp Nutmeg, freshly grated
  • ½ tsp Salt
  • 1 Stick Unsalted Butter, room temperature
  • ¼ C Granulated Sugar
  • 1 ½ tsp Vanilla Extract
  • 4 Large Egg Whites, room temperature
  • ¼ C Maple Syrup
  • ½ C Half-and-Half, room temperature
  • ½ C Cooked Bacon, chopped (about 5 strips)
  • Maple Frosting:
  • 1 8-oz pkg Cream Cheese, room temperature
  • 2 tbs Unsalted Butter, room temperature
  • 2 C Confectioners’ Sugar
  • ¼ C Maple Syrup
  • 2 tsp Ground Cinnamon
  • 3 Strips Cooked Bacon, chopped for garnish

Start this recipe for bacon cupcakes and maple cream cheese frosting by preheating your oven to 325 degrees. Prepare a 12-cup muffin tin by lining it with cupcake liners. Continue by preparing your batter.

Whisk together the flours, pudding mix, baking powder, potato starch, cinnamon, nutmeg, and salt in a bowl. In the bowl of your electric mixer, combine the butter and sugars on low speed until just combined. Slowly begin adding your vanilla and egg whites, scraping down the sides of the bowl as you go.

Once the mixture is light and fluffy, begin gradually adding in your maple syrup and flour mixture until just combined. Alternate additions of the maple syrup and flour, beginning and ending with the flour. Lastly, fold in your chopped bacon.

Divide the batter between your muffin tin holes. Set into your preheated oven to bake for about 40 minutes or until a toothpick inserted in the center comes out clean. Remove from the tin and allow the cupcakes to cool completely before frosting.

In the meantime, make your maple cream cheese frosting. Beat together the cream cheese and butter in the bowl of your electric mixer on medium speed. Once creamy, sift in your confectioners’ sugar and pouring in your maple syrup and cinnamon. Continue beating the mixture until well combined.

Transfer your frosting into a pastry bag and pipe onto your cooled cupcakes. Top each with a sprinkle of crispy bacon pieces and serve.
