  • 1 tsp. chopped fresh rosemary leaves
  • 1 tsp. chopped fresh thyme leaves
  • 1/2 tsp. smoked sweet paprika
  • 1 tsp. salt
  • 1/4 tsp. ground black pepper
  • 4 skinless, boneless chicken breast halves
  • 4 strips thick-cut bacon
  • 1 Tbs. olive oil
  • For Zinful CranApple Sauce
  • 2 Tbs. chopped shallots
  • 1 C. coarsely chopped fresh cranberries
  • 1 C. peeled, diced golden delicious apples
  • 1 C. zinfandel wine or pomegranate juice
  • 1/3 C. seedless red raspberry jam
  • 3/4 tsp. apple pie spice
  • 1/4 tsp. salt

1. Heat oven to 350.  In small bowl, combine
rosemary, thyme, paprika, salt and pepper; rub over
both sides of chicken breasts.  Wrap a bacon slice
diagonally around each chicken breast; secure ends
with wooden picks.  Heat olive oil in large ovenproof
skillet over medium heat.  Add chicken and cook 2
minutes per side or until lightly browned; pour off

2. Transfer chicken in skillet to oven and roast for
10 to 15 minutes or until chicken is cooked through.
Transfer chicken to platter; keep warm.

3. For sauce, place skillet with drippings over
medium heat.  Add shallots and cook until tender,
about 5 minutes, stirring frequently.  Add all
remaining sauce ingredients.  Bring to a boil; scrape
up browned bits.  Reduce heat and simmer until sauce
has thickened slightly, about 5 minutes.  Remove
picks from chicken; serve with sauce.  Garnish with
fresh herbs, if desired.  Makes 4 servings.
