  • 2 tsp. salt, divided
  • 1 pkg. shell pasta
  • 1/2 C. butter
  • 3 Tbsp. flour
  • 2 C. half-and-half
  • 3 C. heavy cream
  • 1 tsp. black pepper
  • 4 C. shredded Cheddar cheese
  • 1 tsp. ground chili pepper
  • 5 cooked bacon slices, chopped

Preheat the oven to 350 degrees. Bring water and 1 teaspoon salt to a boil in a Dutch oven and add the pasta. Cook for 8 minutes until al dente. Drain and set aside. Melt butter in a large saucepan over medium high and cook the onion for 5 minutes until tender. Put in the flour and cook while stirring for about 2 minutes. Pour in the half-and-half, heavy cream, black pepper, and the rest of the salt. Bring to a simmer and cook for 5 minutes until thickened. Slowly stir in the cheese until blended and stir in the pasta. Put the mixture in a baking dish. Season with chili pepper and stir in the bacon. Bake for 20 minutes until bubbling.
